Meatballs

This past weekend Jordan and I went to Sam’s club to stock up on some food. We bought this huge thing of ground beef and I was thinking of all the possibilities for it. A spaghetti squash was also bought, so I thought that meatballs would be perfect. I searched pinterest, but nothing really caught my eye. So I went to my sister who directed me to HER blog where I found a meatball recipe. I did tweek it to be paleo, and I might’ve added a lot more seasonings than what her recipe call for. But man, let me tell you...these things are delish...and they smelt so good!!

Here is the recipe...but please bare with me! I know not the cooking/prep time...and I actually had to measure things out which isn’t normal for me to do! I tried my best!

Ingredients:
1 pound ground beef
2/3 pound breakfast sausage (because that is all I had)
2 eggs, beaten
1/2 cup dehydrated onions
1-2 cloves garlic minced
1 Tbs basil
1 Tbs parsley
1 tsp sea salt
1/2-1 Tbs pepper

Directions:
  1. Turn your oven broiler and get a baking sheet lined with foil and sprayed with nonstick cooking spray.
  2. Mix all the seasonings. Then add into the meat along with the eggs.
  3. Time to get your hands dirty and make 1 ½ inch balls. Place them on your baking sheet.
  4. Cook your meatballs for about 12 to 14 minutes.

After cooking the meatballs (and after Jordan ate a couple)I stuck them in a bag and put them in the freezer. I’ll be pulling them out the next time we decide to have spaghetti squash. With them already being cooked, making dinner won’t take too long!
